Step-by-Step Instructions
  1. Sauté the Aromatics: In a skillet, heat 2 tablespoons of olive oil, add finely diced onion and minced garlic, and sauté until translucent.
  2. Prepare the Meatball Mixture: Combine breadcrumbs, Parmesan, sautéed onions, garlic, egg, milk, and seasonings in a bowl.
  3. Combine the Meats: Fold in ground beef and pork, mix until just combined, and refrigerate for 15 minutes.
  4. Form the Meatballs: Roll the mixture into 1½-inch balls and refrigerate for another 15 minutes.
  5. Brown the Meatballs: In a skillet, melt 1 tablespoon of butter and brown the meatballs in batches.
  6. Make the Gravy: In the same skillet, melt 3 tablespoons of butter, whisk in flour, then gradually add beef broth.
  7. Simmer the Sauce: Allow gravy to simmer for 5-7 minutes, then stir in sour cream and return meatballs to skillet.
  8. Final Cooking of Meatballs: Cover the skillet and simmer for an additional 10-15 minutes until cooked through.
