For the Cream Cheese Filling
  • 8 ounces Cream Cheese or vegan cream cheese
  • 1 cup Powdered Sugar any powdered sweetener works
  • 1 teaspoon Vanilla Extract or almond extract
  • ½ cup Butter or coconut oil for dairy-free

Method
 

Baking Instructions
  1. Preheat your oven to 350ºF (177ºC) and line your baking sheets with parchment paper.
  2. In a medium mixing bowl, whisk together the flour, baking soda, and spices.
  3. In another bowl, beat the eggs and sugar together with an electric mixer until pale and fluffy.
  4. Gently mix in the pumpkin puree, melted butter, and vanilla extract.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Transfer the batter into a piping bag and pipe tablespoon-sized rounds onto prepared baking sheets.
  7. Bake for 10-12 minutes, rotating halfway through, until golden brown.
  8. Allow the whoopie pies to cool on the baking sheets for 5 minutes before transferring to a wire rack.
  9. Prepare the cream cheese filling by beating the butter and powdered sugar until fluffy, then mix in the cream cheese.
  10. Spread the cream cheese filling on one cookie and sandwich with another.
  11. Optionally, dust assembled whoopie pies with powdered sugar before serving.
