Preparation Steps
  1. In a medium bowl, whisk together the balsamic vinegar, honey, olive oil, minced garlic, Italian seasoning, and Dijon mustard. Season with salt and pepper to taste, then set aside.
  2. Halve the grape tomatoes and combine in a large mixing bowl with the mozzarella balls and chopped basil. Sprinkle with a pinch of salt and pepper, tossing gently to coat.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear for 1-2 minutes on each side until golden brown.
  4. Pour balsamic sauce over the chicken in the skillet, then spread the tomato and mozzarella mixture on top. Bake in a preheated oven at 400°F for 18-23 minutes or until the chicken reaches 165°F.
  5. Let chicken rest for 5 minutes, garnish with fresh basil and a drizzle of balsamic glaze before serving.
