For the Stuffing

  • 2 stalks celery Chopped.
  • 1 cup cranberries Fresh or dried.
  • 1 cup pecans Chopped; walnuts can be swapped for a different flavor.
  • 1 box cornbread stuffing mix
  • 2 cups chicken stock Add gradually to control moisture levels.
For Serving
  • ¼ cup fresh herbs Parsley and thyme for garnish.
  • ½ cup pan jus Drizzle over turkey slices.

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. Toast the French bread cubes for about 10–12 minutes until golden and slightly crispy.
  3. Melt the compound butter in a Dutch oven and sauté diced onion, minced garlic, and chopped celery for 5–7 minutes until tender.
  4. Add cranberries, thyme, and additional herbs, and cook for another 2–3 minutes.
  5. Combine toasted bread cubes, cornbread stuffing mix, and chopped pecans in a bowl. Gradually add chicken stock.
  6. Separate the turkey skin from the meat and spread the remaining compound butter underneath the skin.
  7. Spread the stuffing mixture on a baking dish and place the turkey breast on top.
  8. Roast in the oven for approximately 40–45 minutes until the internal temperature reaches 165°F (74°C).
