- In a small bowl, mix together garlic powder, onion powder, paprika, salt, and black pepper with olive oil until well combined. Set aside.
- Pat the turkey breast dry with paper towels. Apply the spice rub all over the turkey, focusing on the skin.
- Place the halved garlic head, unpeeled onion, and fresh thyme at the bottom of your slow cooker.
- Lay the seasoned turkey breast on top of the aromatics in the slow cooker. Cover and cook on LOW for about 6 hours.
- Remove the turkey from the slow cooker and let it rest on a cutting board for 20 minutes.
