Preparation Steps
- In a large skillet, heat 2 tablespoons of avocado oil over medium-high heat until shimmering, about 1-2 minutes.
- Add 4 cups of cubed potatoes to the skillet. Sauté for about 6 minutes until starting to turn golden brown.
- Push the potatoes to one side and add 1 pound of ground beef. Crumble as it cooks until browned, about 5 minutes.
- Stir in 1 diced onion and 1 cup of diced red bell pepper, season with salt and pepper, and sauté for an additional 5-7 minutes.
- Mix in 1 can of diced green chiles, 2 teaspoons of chili powder, 1 teaspoon of cumin, and 1 teaspoon of smoked paprika.
- Cover and simmer for 6-8 minutes, until the potatoes are fork-tender.
- Sprinkle 1 cup of shredded cheese on top, cover for about 2 minutes until melted and bubbly.
- Remove from heat, garnish with fresh chopped cilantro, and serve warm.
