Step-by-Step Instructions
  1. Cut the chicken breast into bite-sized pieces and season with salt, pepper, and half of the spice mix.
  2. Heat 2 tablespoons of olive oil over medium-high heat, add chicken, and cook until golden brown, about 5-7 minutes.
  3. Remove chicken and add onions to the same skillet, sauté until translucent, then add broccoli, zucchini, and bell peppers, cooking for 5-7 minutes.
  4. Pour in chicken broth, scrape the bottom of the skillet, and simmer for 2 minutes.
  5. Return chicken to the skillet, fold it into the vegetables, and cook together for an additional 3-5 minutes.
