  • 1 cup Blueberries Rinsed
  • 2 cups Grilled/Poached Chicken Diced or shredded
  • 1 small Red Onion Finely diced
  • 1 cup Pecans Toasted and chopped
  • ½ cup Feta Cheese Crumbled
For the Dressing
  • ½ cup Poppyseed Dressing Store-bought or homemade

Method
 

Step-by-Step Instructions
  1. Chop the lettuce and place it in a large mixing bowl.
  2. Prepare the fruits by slicing the strawberries and rinsing the blueberries.
  3. Finely dice the red onion and add it to the bowl with the romaine lettuce.
  4. Toast the pecans in a skillet until golden brown, then chop and add to the bowl.
  5. Cook the chicken if not precooked, then dice or shred it and add to the bowl.
  6. Combine all prepared ingredients in the mixing bowl and toss gently.
  7. Drizzle with poppyseed dressing, toss again and serve immediately.
  8. Garnish with feta cheese or fresh mint leaves if desired.
