- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
- Add 1 diced onion and 1 diced red bell pepper, sautéing for 2-3 minutes until softened.
- Add 3 minced garlic cloves and sauté for 30 seconds.
- Crumble in 1 pound of ground turkey and cook for about 5 minutes until browned.
- Drain excess moisture and sprinkle in 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon chipotle powder, 1 tablespoon dried cilantro, kosher salt and black pepper.
- Stir in 1 can of Rotel, 1 can of diced green chiles (optional), 1 can of drained black beans, and 1 cup of frozen corn. Cook for another 2 minutes.
- Fold in 3 cups of cooked rice and half of the shredded cheddar cheese. Cook for another 2 minutes.
- Top with remaining cheddar cheese, cover, and let sit for 5 minutes.
- Serve hot, garnished with sliced scallions, lime juice, and tortilla chips.
