Ingredients
  

For the Skillet
  • 2 tablespoons olive oil for sautéing
  • 1 onion diced
  • 1 red bell pepper diced
  • 3 garlic cloves minced
  • 1 pound ground turkey or substitute with ground chicken or beef
  • 1 tablespoon chili powder adjust based on heat preference
  • 1 teaspoon cumin or coriander for a twist
  • 1 teaspoon chipotle powder omit for milder dish
  • 1 tablespoon dried cilantro fresh can be used if available
  • 1 teaspoon kosher salt to taste
  • 1 teaspoon black pepper to taste
  • 1 can Rotel diced tomatoes with green chiles
  • 1 can diced green chiles optional
  • 1 can black beans drained
  • 1 cup frozen corn or fresh/canned
  • 3 cups cooked rice day-old preferred
  • 1 cup shredded cheddar cheese or any melting cheese

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
  2. Add 1 diced onion and 1 diced red bell pepper, sautéing for 2-3 minutes until softened.
  3. Add 3 minced garlic cloves and sauté for 30 seconds.
  4. Crumble in 1 pound of ground turkey and cook for about 5 minutes until browned.
  5. Drain excess moisture and sprinkle in 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon chipotle powder, 1 tablespoon dried cilantro, kosher salt and black pepper.
  6. Stir in 1 can of Rotel, 1 can of diced green chiles (optional), 1 can of drained black beans, and 1 cup of frozen corn. Cook for another 2 minutes.
  7. Fold in 3 cups of cooked rice and half of the shredded cheddar cheese. Cook for another 2 minutes.
  8. Top with remaining cheddar cheese, cover, and let sit for 5 minutes.
  9. Serve hot, garnished with sliced scallions, lime juice, and tortilla chips.
