  • 3 cups cubed potatoes (Yukon Gold or Red) avoid using Russet potatoes
  • 1 pound ground beef can substitute with ground turkey, chicken, or plant-based crumbles
  • 1 medium onion any type of onion works well
  • 1 medium red bell pepper can swap with green bell pepper or any preferred colored pepper
  • to taste kosher salt
  • to taste black pepper
  • 1 can diced green chiles can use jalapeños for more heat
  • 2 tablespoons chili powder use less for a milder dish or substitute with paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika can substitute with regular paprika if unavailable
  • to taste fresh cilantro omit if not a fan of cilantro
  • 1 cup shredded cheese use any cheese like cheddar or Monterey Jack
  • 1 tablespoon fresh lime juice optional but highly recommended

Method
 

Step-by-Step Instructions
  1. Heat the oil in a large skillet over medium-high heat until shimmering, about 1-2 minutes.
  2. Add the cubed potatoes, stirring frequently for about 6-8 minutes until golden brown and slightly crispy on the edges.
  3. Push the potatoes to one side and add the ground beef. Cook, crumbling the meat, and stir in the onion and red bell pepper.
  4. Season with salt and pepper, letting the beef brown for approximately 5-7 minutes.
  5. Stir in the diced green chiles, chili powder, cumin, and smoked paprika; include the chopped cilantro.
  6. Cover loosely with a lid and cook for 6-8 minutes until the potatoes are tender.
  7. Sprinkle shredded cheese evenly over the skillet and cover for 1-2 minutes until melted.
  8. Remove from heat and serve hot, garnishing with extra cilantro and lime juice.
