Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together soy sauce, water, brown sugar, rice vinegar, sesame oil, ginger, and sriracha. Set aside.
  2. Heat oil in a large skillet. Add ground turkey and garlic powder. Cook until browned, about 5-7 minutes.
  3. In the same skillet, add oil, zucchini, grated carrot, and red pepper. Stir-fry for 3-5 minutes until tender yet crisp.
  4. Return turkey to skillet, pour prepared sauce over and stir to combine. Gradually add cornstarch slurry and cook until thickened.
  5. Serve over jasmine rice and garnish with chopped green onions and additional sriracha if desired.
