  • 1 pound Thinly Sliced Beef best cuts are ribeye or sirloin
  • 1 medium Onion slice thinly for quick cooking
  • 1 tablespoon Olive Oil can substitute with vegetable oil
  • 1 tablespoon Dashi Powder can substitute with chicken or vegetable broth
  • 1 tablespoon Sugar honey or maple syrup can be used
  • 2 tablespoons Sake can substitute with rice vinegar for a non-alcoholic version
  • 2 tablespoons Mirin can substitute with extra sugar and water mix
  • 1 tablespoon Ginger Juice fresh grated ginger can be used
  • 3 tablespoons Soy Sauce tamari is a gluten-free option
For the Rice and Garnish
  • 1 cup Japanese Rice short-grain rice is preferable
  • 2 stalks Scallions can substitute with chives
  • ¼ cup Red Pickled Ginger omit if unavailable

Method
 

Step-by-Step Instructions
  1. Heat olive oil in a medium saucepan over medium heat and sauté the thinly sliced onion for 3-4 minutes until translucent.
  2. Combine sauce ingredients (water, dashi powder, sugar, sake, mirin, ginger juice, soy sauce) into the saucepan; bring to a simmer for 2-3 minutes.
  3. Add thinly sliced beef to the sauce, ensuring it’s submerged. Simmer for about 5 minutes until beef is tender and pink color is gone.
  4. Prepare Japanese rice by rinsing under cold water and cooking with 1 and ¼ cups of water in a small pot for 15-20 minutes.
  5. Serve the beef and sauce over warm rice, garnished with scallions and red pickled ginger.
