Step-by-Step Instructions for Spaghetti Aglio e Olio
- Fill a large pot with water and add a generous pinch of salt. Bring it to a rolling boil over high heat, around 8-10 minutes. Add spaghetti and cook according to package instructions until al dente, around 8-10 minutes.
- While the pasta cooks, heat ⅓ cup of high-quality extra virgin olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 2-3 minutes until golden.
- Once the spaghetti is al dente, reserve about ½ cup of pasta water, then drain the rest. Add the drained pasta into the skillet with the garlic oil, toss well for 1-2 minutes.
- Sprinkle in red pepper flakes to taste while tossing the pasta. Continue tossing for another minute to blend the flavors.
- Remove from heat and stir in the chopped parsley. Drizzle with a bit of reserved pasta water if needed, then serve hot topped with grated Parmesan.
