Step-by-Step Instructions for Spaghetti Aglio e Olio
  1. Fill a large pot with water and add a generous pinch of salt. Bring it to a rolling boil over high heat, around 8-10 minutes. Add spaghetti and cook according to package instructions until al dente, around 8-10 minutes.
  2. While the pasta cooks, heat ⅓ cup of high-quality extra virgin olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 2-3 minutes until golden.
  3. Once the spaghetti is al dente, reserve about ½ cup of pasta water, then drain the rest. Add the drained pasta into the skillet with the garlic oil, toss well for 1-2 minutes.
  4. Sprinkle in red pepper flakes to taste while tossing the pasta. Continue tossing for another minute to blend the flavors.
  5. Remove from heat and stir in the chopped parsley. Drizzle with a bit of reserved pasta water if needed, then serve hot topped with grated Parmesan.
