- In a large mixing bowl, combine freshly minced garlic, lemon juice, olive oil, salt, and pepper. Whisk until blended, then add the chicken thighs and let the chicken marinate for at least 20 minutes.
- While the chicken marinates, heat a large, heavy-bottomed pot over medium-high heat. Add a drizzle of olive oil.
- Add the marinated chicken thighs to the pot, spaced evenly apart. Sear for about 4-5 minutes on one side until golden brown, then flip and cook for another 4-5 minutes.
