Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water, add farfalle pasta, and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add Italian sausage and cook for 5-6 minutes, breaking into pieces until browned.
  3. Stir in chopped garlic and cook for 30 seconds until aromatic.
  4. Add halved cherry tomatoes, paprika, and cayenne pepper to the skillet. Simmer for 5 minutes.
  5. Pour in tomato puree, stir well, and let simmer for 3-4 minutes until sauce thickens.
  6. Add fresh spinach to the skillet and cook for another 1-2 minutes until wilted.
  7. Combine drained pasta with sausage and sauce, using reserved pasta water to adjust sauce consistency.
  8. Season with salt and pepper to taste and serve hot, garnished with Parmesan or fresh herbs if desired.
