Step-by-Step Instructions
  1. Heat a large pot over medium-high heat and add olive oil. Once it shimmers, add onions, carrots, celery, and mushrooms. Sauté for about 8 minutes until softened.
  2. Stir in minced garlic, Italian seasoning, and black pepper. Sauté for 30 seconds until fragrant.
  3. Pour in chicken broth and bring to a gentle boil. Add red potatoes, cover, and reduce heat to simmer for 25-30 minutes.
  4. Stir in pre-cooked Italian sausage and kale. Simmer for an additional 3 minutes.
  5. Taste and season with salt and pepper. Adjust to your liking before serving.
