- Preheat your oven to 350°F (175°C) and prepare an 8x8 inch baking pan by lining it with parchment paper or greasing it.
- In a large mixing bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth.
- Sift in the oat flour, rolled oats, pumpkin pie spice, and baking soda, gently folding them into the wet ingredients until just combined.
