Cooking Steps
- Preheat your oven to 400°F (200°C).
- Slice bell peppers in half lengthwise, removing seeds and pith.
- Sauté minced shallots in olive oil over medium heat for 3-4 minutes.
- Add minced garlic and chopped broccoli, cooking for an additional 2-3 minutes.
- Stir in shredded chicken, cooked rice, and seasonings; cook for 2-3 minutes.
- Mix in half of the cheddar and mozzarella cheese.
- Spoon filling into each pepper half and top with remaining cheese.
- Cover with foil and bake in the oven for approximately 30 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is bubbly.
- Let cool slightly before serving.
