  • 4 medium Bell Peppers vibrant colors
  • 2 cups Rotisserie Chicken shredded
  • 1 cup Shallots minced
  • 2 cloves Garlic minced or powdered
  • 1 cup Broccoli chopped
  • 2 cups Rice cooked
  • 1 cup Cheddar Cheese shredded
  • 1 cup Mozzarella Cheese shredded
  • ½ cup Chicken Broth or vegetable broth
  • 1 teaspoon Seasonings (Salt, Pepper, Italian Herbs)

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. Slice bell peppers in half lengthwise, removing seeds and pith.
  3. Sauté minced shallots in olive oil over medium heat for 3-4 minutes.
  4. Add minced garlic and chopped broccoli, cooking for an additional 2-3 minutes.
  5. Stir in shredded chicken, cooked rice, and seasonings; cook for 2-3 minutes.
  6. Mix in half of the cheddar and mozzarella cheese.
  7. Spoon filling into each pepper half and top with remaining cheese.
  8. Cover with foil and bake in the oven for approximately 30 minutes.
  9. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
  10. Let cool slightly before serving.
