  • 1 ½ cups old-fashioned oats avoid quick oats
  • 1 teaspoon baking soda fresh
  • ½ teaspoon salt kosher or sea salt recommended
  • 1 teaspoon vanilla extract almond extract for variation

Method
 

Instructions
  1. Preheat your oven to 350°F (180°C) and line baking trays with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a medium bowl and set aside.
  3. Cream the butter, brown sugar, and granulated sugar together using an electric mixer.
  4. Add vanilla extract and incorporate eggs one at a time.
  5. Gradually combine the dry mixture with the wet mixture until just combined.
  6. Fold in old-fashioned oats until evenly distributed.
  7. Drop spoonfuls of dough onto the prepared baking trays leaving space in between.
  8. Bake for 11 to 13 minutes until edges are golden and centers are soft.
  9. Cool for a few minutes on trays before transferring to a cooling rack.
