  • 1 pound Kielbasa or substitute with chicken sausage or plant-based options
  • 4 cups Cabbage chopped, small green or Napa cabbage works best
  • 2 tablespoons Olive Oil for sautéing
  • 2 tablespoons Red Wine Vinegar for tanginess
  • 1 tablespoon Mustard Dijon or whole grain
  • 1 teaspoon Garlic Powder or fresh garlic for a robust aroma

For the Mustard Vinaigrette
  • ¼ cup Olive Oil same as above for consistency
  • 2 tablespoons Red Wine Vinegar to enrich the dish
  • 1 tablespoon Mustard repeat from above for consistency
  • 1 teaspoon Garlic Powder included again for flavor
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. In a small bowl or jar, combine olive oil, red wine vinegar, mustard, garlic powder, and a pinch of salt and pepper. Whisk or shake until well emulsified and creamy. Set aside.
  2. Heat a large skillet over medium heat and add the sliced kielbasa. Sauté for 5-7 minutes or until evenly browned and caramelized.
  3. Add 1 diced onion to the skillet with the kielbasa and cook for about 5 minutes, stirring frequently until soft and translucent.
  4. Stir in chopped cabbage along with a pinch of salt and pepper. Cook for approximately 8-10 minutes, stirring occasionally until tender.
  5. Drizzle half of the mustard vinaigrette over the skillet mixture and gently stir to coat evenly.
  6. Remove from heat and garnish with fresh parsley or dill. Serve warm.
