  • 4 cups Yukon Gold Potatoes diced
  • 2 cups Green Beans trimmed

  • 1 package Dry Italian Dressing Mix or homemade mix

Method
 

Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Dice Yukon Gold potatoes into bite-sized chunks and trim green beans to 1-inch sections. Arrange in baking dish.
  3. Nestle chicken breasts in the center of the baking dish atop the vegetables.
  4. Slice butter into small pieces and scatter over chicken and vegetables.
  5. Sprinkle dry Italian dressing mix evenly over the dish.
  6. Cover baking dish tightly with aluminum foil and bake for about 1 hour.
  7. In the final 10 minutes, remove foil to allow chicken to brown.
  8. Check chicken with a meat thermometer to ensure it reaches 165°F (75°C).
