Preparation Steps
- Preheat your oven to 375°F (190°C). Season chicken breasts with salt and pepper and place them in a baking dish. Bake for 25-30 minutes until cooked and juices run clear. Shred the chicken into bite-sized pieces once cooled.
- While chicken cools, wash and dice celery into small pieces. Slice green onions thinly. Halve or quarter the blackberries and set aside.
- In a large mixing bowl, combine shredded chicken, diced celery, sliced green onions, blackberries, and chopped walnuts. Gently fold together.
- Spoon in cottage cheese and mayonnaise. Mix gently to coat ingredients without crushing blackberries.
- Sprinkle in salt and pepper to taste, then mix gently once more.
- Transfer to a serving dish or keep in mixing bowl, cover, and chill for at least 30 minutes before serving.
