  • 1 pound Lean Ground Beef
  • 1 cup Onion Rings yellow or sweet onions preferred
  • 1 can Tomatoes diced, drained if canned
  • 1 medium Green Bell Peppers chopped
  • 2 tablespoons Olive Oil for greasing and drizzling
  • to taste Salt preferably kosher
  • to taste Pepper freshly ground

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, cook ground beef over medium heat for about 5-7 minutes until evenly browned. Drain excess fat and season with salt and pepper.
  3. Layer thinly sliced russet potatoes in the greased baking dish, then drizzle with olive oil.
  4. Spread the cooked ground beef evenly over the potato layer.
  5. Add onion rings followed by diced tomatoes on top of the beef layer.
  6. Top with chopped green bell peppers and season each layer with a pinch of salt and pepper.
  7. Cover with aluminum foil and bake in the preheated oven for approximately 2 hours.
  8. Let cool for a few minutes before slicing and serving warm.
